This is a great video. I have 2 saijo trees, but this if their first year flowering for both trees. I love hearing it's better than Haichyia.

2:25 you ate that poor ant along with it, lol. Little bit of protein can't hurt eh? Do you recommend Saijo, Nikita or Giombo if you were picking just one of the three to grow?
Nice!! Good job! You can pick and leave them to ripe over the counter. Some people arrange them in a basket or box and put in an apple to help it ripe (I am not sure what the apple will do though). May I ask how old is your Saijo here to get this fruits? Mine has only been in the ground in May of this year.
